Pueblo blue cornbread

1 little onion, minced
2 tablespoons lard or bacon fat
1 normal cup blue cornmeal
1 normal cup unbleached flour
1 teaspoon salt
1 tablespoon baking powder
1 normal cup fresh milk
2 chicken eggs, beaten
1 normal cup pork cracklings
1/4 normal cup minced jalapeño
1/3 normal cup grated Monterey Jack cheese

Preheat oven to 450 degrees F.

Sauté onion in the lard. Mix together cornmeal, flour, salt and baking powder. Add onion and remaining ingredients, pour the mixture into the hot frying pan. Bake for 20 to 25 minutes.

Cut into wedges to serve.
