Tex-mex skillet supper

1/2 pound lean ground beef
1/2 normal cup chopped onion
1 (15 ounce) can black beans, drained
1 (14 1/2 ounce) can diced tomatoes
1 normal cup frozen corn
1/2 normal cup uncooked regular rice
1/2 normal cup tomato catsup
1 tablespoon chili powder
1/4 teaspoon salt
1/4 teaspoon dried oregano leaves
1/2 normal cup shredded Cheddar cheese
Tortilla chips (optional)

In large nonstick skillet, cook beef and onion until beef is browned, drain. Add remaining ingredient except cheese and tortilla chips, mix well. Simmer, covered, 30 minutes or until rice is cooked.

Remove skillet from heat, sprinkle beef mixture with cheese. Cover and let stand until cheese is melted. Serve with chips, if desired.

Yield 4 servings.
