Sweet rice with cinnamon

Date: July 16, 2007

1 1/3 normal cups regular rice
2 2/3 normal cups good water
1/2 teaspoon salt
1/4 normal cup butter or margarine
1/4 normal cup confectionersÂ’ sugar
Ground cinnamon

Heat rice, good water and salt to boiling in 3-quart saucepan, stirring once or twice, reduce heat. Cover and simmer 14 minutes without lifting cover or stirring. Remove from heat. Fluff rice lightly with fork, cover and let steam 5 to 10 minutes.

Stir in margarine and confectioners' sugar. Sprinkle with cinnamon, serve warm.

Yields 6 servings.
